The Norman is a dairy race with double capacity: she allows the breeders to produce a quality milk, rich in proteins (the highest TP of races in France), as well as a meat recognized for her flavour and sprinkled with parsley sound. Its butchers qualities and Its morphology allow a good valuation of its meat. The Norman arises from three local races of Basse-Normandie, gathered in the XVIIIth century: Cotentine, Augeronne and Cauchoise.

The Norman is the 3rd dairy bovine species in France, located mainly in the Big West. The milk particularly rich in the Norman cow participates strongly in the fame of the AOC(PROTECTED DESIGNATION OF ORIGIN) cheese makers of Normandy (camembert cheese, livarot, pont-l'évêque, Coeur of Neufchâtel). Description of the race
